Guacamole

Guacamole is a traditional Mexican accompaniment for fajitas. It can also be used as a scrumptious dip.

  • 2 ripe avocados
  • ¼ lime, juiced
  • 1 clove garlic, chopped
  • ½ fresh chilli, seeded and chopped, optional
  • Himalayan Salt
  • Freshly ground black pepper or cayenne pepper, optional

Halve, remove the stones and spoon the flesh into a mixing bowl. Roughly mash with a fork or potato masher then season with salt and freshly ground black pepper or cayenne pepper.

Add the lime juice and garlic to taste, along with chilli if you wish. Continue mashing or use a blender until desired consistency is achieved.

Pack into a small container and press paper over the surface, making sure there are no air pockets. (This stops the top layer from discolouring.) Cover with a lid and chill until ready to go.

Lasts up to 5 days in the refrigerator.
