Savoury Lentil Soup

Description

A hearty and filling, very easy to make, soup.

Ingredients

  • 8 ozs red lentils washed
  • 2 onions chopped
  • 2 oz dairy free margarine
  • 3 pints vegetable stock
  • Approx 1 tablespoonful yeast extract
  • Seasoning

Method

  • Cook onions in margarine for a few minutes, add stock and lentils and cook over a low heat until lentils are soft. Liquidise until smooth. Return to pan and add seasoning to taste.
