Mock Cheese Cake

Ingredients

  • 10oz co-op digestive biscuits
  • 3 1/2oz dairy free margarine
  • 1 packet firm tofu (morinaga)
  • 2 dessertspoonfuls castor sugar
  • Juice and grated rind of 1 lemon
  • 1/4 packet soya cream
  • 1 tin cherry pie filling

Method

  • Make base by mixing the crushed biscuits with the melted fat and lining a flan dish with the mixture
  • Beat all remaining ingredients together and pour onto base.
  • Cook at 175 f for 30 mins
  • When cool spread cherry pie filling on top to finish.
