Chocolate Mousse

Ingredients

  • 3 1/2 oz (100g) vegan plain chocolate
  • 8 fl oz soya cream
  • 1 tablespoon Brandy, Rum, Amaretto or Cointreau
  • 1 cup toasted slithered almonds

Method

  • Put toasted almonds into 4 ramekin dishes, meanwhile melt the chocolate in the microwave.
  • Add the soya cream and alcohol and whisk until the mixture has cooled and thickened.
  • Pour into ramekin dishes and leave in fridge to chill and set.
