Tofu Vegan Cheesecake
Ingredients
For the base
- 16oz (150grams) co-op digestive biscuits or other vegan
biscuits
- 3 1/2 oz dairy free margarine
For the filling
- 10oz( 285g) firm silken style tofu (mori-nu)
- 2 tbs vegetable oil
- 2oz caster sugar
- juice and rind of 1 lemon
- 1tsp vanilla essence
- 1 1/2 oz ground almonds
- 2 oz sultanas
Method
- Make the base by mixing crushed biscuits with the melted
margarine.
- Spoon into a loose base flan tin and press down evenly.
- Put tofu,oil,sugar,lemon juice and rind,vanilla essence into
food blender and blend thoroughly.
- Stir in ground almonds and sultanas.
- Spoon filling onto base and spread evenly.
- Put in oven for 30mins 350 F (180 C gas mark 4).
- Cool, and chill before serving.
