Chocolate Banana Cake
Ingredients
- 225g (8oz) plain flour
- 50g (2oz) cocoa powder
- 1tsp baking powder
- 3 bananas medium ripe
- 150ml (5fl.oz) soya milk or rice milk
- 200g (7oz) caster sugar
- 3 drops vanilla essence
- 100g (4oz) vegetable margarine (eg sainsbury's free from) melted
Method
- Preheat the oven to 350 f/180 c/gas 4
- Sift the flour, cocoa and baking powder together.
- Mix together the bananas, soya milk, sugar and vanilla essence, in a blender or by hand
- Pour the banana mixture and melted margarine into the dry ingredients and mix thoroughly.
- Grease two 7inch cake tins and pour half the mixture into each tin.
- Cook in the centre of the oven for about 45 mins
- Cool on a wire rack.
- Cream the filling ingredients together, add the tiniest splash of soya milk if the mixture is too stiff.
- Sandwich the two cakes together with two thirds of the filling and spread the rest on top.
