Chocolate Banana Cake

Ingredients

  • 225g (8oz) plain flour
  • 50g (2oz) cocoa powder
  • 1tsp baking powder
  • 3 bananas medium ripe
  • 150ml (5fl.oz) soya milk or rice milk
  • 200g (7oz) caster sugar
  • 3 drops vanilla essence
  • 100g (4oz) vegetable margarine (eg sainsbury's free from) melted

Method

  • Preheat the oven to 350 f/180 c/gas 4
  • Sift the flour, cocoa and baking powder together.
  • Mix together the bananas, soya milk, sugar and vanilla essence, in a blender or by hand
  • Pour the banana mixture and melted margarine into the dry ingredients and mix thoroughly.
  • Grease two 7inch cake tins and pour half the mixture into each tin.
  • Cook in the centre of the oven for about 45 mins
  • Cool on a wire rack.
  • Cream the filling ingredients together, add the tiniest splash of soya milk if the mixture is too stiff.
  • Sandwich the two cakes together with two thirds of the filling and spread the rest on top.
