Menopause Cake

Description

This is called The Menopause Cake but can be eaten by anyone as its so good for you, no fat and no sugar. One slice contains the RDA of phytoestrogens.

Ingredients

  • 1 cup soya flour
  • 1 cup wholemeal flour
  • 1 scant cup rolled oats
  • 1/2 cup sunflower seeds
  • 1/2 cup pumpkin seeds
  • 1/2 cup sesame seeds
  • 1/2 cup flaked almonds
  • 2 pieces stem ginger finely chopped
  • 1 1/2 cup raisins
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • about 2 cups soya milk
  • 1 tablespoon malt extract.

Method

  • Put all dry ingredients in a large mixing bowl.
  • Add the soya milk and malt extract, mix well and leave to soak for about 30 minutes.
  • Heat oven to 375 degrees F. or 190 degrees C
  • Line a large loaf tin with waxed paper.
  • If the mixture ends up too stiff (it should have a soft dropping consistency, just too thick to pour) stir in some more soya milk.
  • Spoon the mixture into the prepared pan and bake for 1 1/2 hours.
  • Test with a skewer and if it is not cooked through, allow five to ten more minutes. Turn out on a wire rack. Eat in thick slices with soya margarine.
