Vegan Coffee Cake
Ingredients
- 10 oz self raising flour
- 2 oz soya flour
- 1 teaspoonful bicarb of soda
- 8 oz caster sugar
- 8 fl oz light olive oil
- 5 fl oz fresh orange juice
- 5 fl oz boiling water mixed with heaped tablespoon coffee then cooled
- 1 1/2 teaspoons vanilla essence
- walnuts chopped if liked for decoration
Method
- preheat oven 160oc/325of/gas 3
- Grease and line two 8-81/2 sandwich tins
- sift flours into mixing bowl and add sugar
- in another bowl combine all the liquids and whisk together. Pour into dry ingredients and mix well to a smooth batter.
- Pour into tins and bake in the oven for 30 mins, the cakes should be starting to shrink away from the sides of the tins
- Leave to cool for 5 mins and then turn them out onto wire cooling trays.
- Sandwich cakes together with vegan (butter) cream flavoured with coffee and sprinkle chopped walnuts in as well.
- Put more coffee (butter) cream on top and decorate with walnuts Recipe by Sue Daniels
