Vegan Coffee Cake

Ingredients

  • 10 oz self raising flour
  • 2 oz soya flour
  • 1 teaspoonful bicarb of soda
  • 8 oz caster sugar
  • 8 fl oz light olive oil
  • 5 fl oz fresh orange juice
  • 5 fl oz boiling water mixed with heaped tablespoon coffee then cooled
  • 1 1/2 teaspoons vanilla essence
  • walnuts chopped if liked for decoration

Method

  • preheat oven 160oc/325of/gas 3
  • Grease and line two 8-81/2 sandwich tins
  • sift flours into mixing bowl and add sugar
  • in another bowl combine all the liquids and whisk together. Pour into dry ingredients and mix well to a smooth batter.
  • Pour into tins and bake in the oven for 30 mins, the cakes should be starting to shrink away from the sides of the tins
  • Leave to cool for 5 mins and then turn them out onto wire cooling trays.
  • Sandwich cakes together with vegan (butter) cream flavoured with coffee and sprinkle chopped walnuts in as well.
  • Put more coffee (butter) cream on top and decorate with walnuts
