Eggless Fruit Cake
Ingredients
- 1 lb Self-raising Flour
- A large pinch of salt
- 1 level teaspoon mixed spice
- 8 oz dairy free margarine mixed with white vegetable fat
- 8 oz soft brown sugar
- 8 oz seedless raisins or sultanas, washed and drained
- 2 oz currants, washed and drained
- A little grated lemon or orange rind
- Soya or rice milk to mix
Method
- Sift flour with salt and spice. Rub in the fat very finely. Add the
sugar and fruit with grated rind. Mix all well together.
- Make a well in the centre and add enough milk to make a 'dropping'
consistency.
- Put into a well greased 8" cake tin.
- Bake in a moderate oven, 360 f for about 1 1/2 to 3/4 hours.
