Eggless Fruit Cake

Ingredients

  • 1 lb Self-raising Flour
  • A large pinch of salt
  • 1 level teaspoon mixed spice
  • 8 oz dairy free margarine mixed with white vegetable fat
  • 8 oz soft brown sugar
  • 8 oz seedless raisins or sultanas, washed and drained
  • 2 oz currants, washed and drained
  • A little grated lemon or orange rind
  • Soya or rice milk to mix

Method

  • Sift flour with salt and spice. Rub in the fat very finely. Add the sugar and fruit with grated rind. Mix all well together.
  • Make a well in the centre and add enough milk to make a 'dropping' consistency.
  • Put into a well greased 8" cake tin.
  • Bake in a moderate oven, 360 f for about 1 1/2 to 3/4 hours.
