Artichoke, olive, rocket and balsamic vinegar baguette

Ingredients

(Makes 1 sandwich)

  • 3 artichoke hearts
  • 5 olives
  • Handful of rocket
  • A splash of balsamic vinegar
  • A drizzle of olive oil
  • Ciabatta

Method

  • Slice the artichoke hearts in to several pieces. Halve the olives. Take a handful of rocket and mix them all together in a bowl.
  • Add the olive oil and balsamic vinegar.
  • Cut the ciabatta in half and drizzle a little olive oil on it.
  • Warm the ciabatta on a skillet or in the oven for a few minutes.
  • Remove from the oven/skillet and place the contents of the bowl into the ciabatta.
