Artichoke, olive, rocket and balsamic vinegar baguette
Ingredients
(Makes 1 sandwich)- 3 artichoke hearts
- 5 olives
- Handful of rocket
- A splash of balsamic vinegar
- A drizzle of olive oil
- Ciabatta
Method
- Slice the artichoke hearts in to several pieces. Halve the olives. Take a handful of rocket and mix them all together in a bowl.
- Add the olive oil and balsamic vinegar.
- Cut the ciabatta in half and drizzle a little olive oil on it.
- Warm the ciabatta on a skillet or in the oven for a few minutes.
- Remove from the oven/skillet and place the contents of the bowl into the ciabatta.
