Super Sausage Stirfry

Ingredients

  • 1 packet Linda McCartney sausages
  • 1 onion thinly sliced
  • 1 packet 250g.oyster mushrooms chopped (not too small)
  • 6 sliced sundried tomatoes
  • 1 tbsp oil from sundried tomatoes
  • 3 carrots peeled and cut into small sticks
  • 100gram packet of roasted cashew nuts
  • 1 packet mixed greens containing rocket, spinach.
  • 2 tbsp sundried tomatoe paste
  • 4 tbsp soy sauce
  • 125grams oriental soba noodles(cooked according to packet

Method

  • Chop sausages into small bite size chunks and fry in a little oil until crisp put to one side.
  • Using a wok put oil and onion in first and toss until soft, add carrots and tomatoes, stirfry.
  • When carrots are just beginning to go soft add oyster mushrooms, sundried tomato paste and soy sauce.
  • Toss well and cook for 2 minutes.
  • Add rocket greens and cashew nuts, toss well until greens go all limp.
  • Finally add sausages and soba noodles. Stirfry until everything is warmed through.
  • Serve in warm pasta bowls. Enjoy!!
