Rustic Sausage Stir Fry

Ingredients

  • 4 Vegetarian or Vegan sausages chopped into thick chunks
  • 4 oz wholemeal macaroni
  • 1 onion finely chopped
  • 1 red onion finely chopped
  • 8 oz button mushrooms 1/2 quantity chopped
  • 6 large tomatoes skinned and chopped
  • 1 medium carrot grated
  • 1 red pepper cut into sticks
  • 1 tin sweet corn drained
  • 2 tbsp tomatoes puree
  • 2 vegetarian vegetable stock cubes
  • 1 tsp dried thyme
  • 1 bay leaf
  • 6 tbsp olive oil

Method

  • Cook macaroni in boiling water till adent.
  • Strain and put to one side.
  • In a wok gently saute onions in 4 tbls olive oil until soft. Add tomatoes and mushrooms. Toss well, add pepper and sausages.
  • Crumble stock cubes and add to the mixture with the tomatoes, tomato puree and bay leaf and thyme, stir and cook
  • Add the carrot and sweet corn. Stir well all the time until very hot then add the macaroni and 2 tbls olive oil
  • When warm through remove bay leaf and serve with crusty bread and side salad.
  • This is a lovely rustic recipe with tiny whole mushroom and chunks of tasty vegetarian sausage and subtle flavours.
