Vegan Mushroom Gnochi

Ingredients

  • 1 Packet Gnocchi
  • 1 Packet Oyster mushrooms chopped roughly
  • 1 Onion chopped finely
  • Soya Dream (alternative to cream)
  • Half jar sun dried tomato paste
  • 3 slices of meat free bacon cut into strips
  • Salt and Pepper

Method

  • Cook onion in Soya margarine until soft add mushrooms and meat free bacon strips stir and add seasoning.
  • When mushrooms are cooked add tomato paste and stir well.
  • Add enough Soya dream to make a thick coating sauce.
  • Meanwhile cook gnocchi according to directions on packet drain and add to sauce.
  • Place in ovenproof dish and put into hot oven to warm through.
  • Serve with side salad or fresh green beans or broccoli.
