Vegan Mushroom Gnochi
Ingredients
- 1 Packet Gnocchi
- 1 Packet Oyster mushrooms chopped roughly
- 1 Onion chopped finely
- Soya Dream (alternative to cream)
- Half jar sun dried tomato paste
- 3 slices of meat free bacon cut into strips
- Salt and Pepper
Method
- Cook onion in Soya margarine until soft add mushrooms and meat free bacon strips stir and add seasoning.
- When mushrooms are cooked add tomato paste and stir well.
- Add enough Soya dream to make a thick coating sauce.
- Meanwhile cook gnocchi according to directions on packet drain and add to sauce.
- Place in ovenproof dish and put into hot oven to warm through.
- Serve with side salad or fresh green beans or broccoli.
