Vegan Mushroom Roast

Ingredients

  • 8oz mushrooms (large type are tastier), chopped finely
  • 8oz Cheezly (vegan cheese) grated
  • 2 onions chopped finely
  • 1 tbs soya flour mixed with 2 tbs water
  • 1 tbs tahini paste
  • 2 tsp. Marmite
  • 6 oz brown breadcrumbs
  • Salt and pepper
  • 4 oz vegan margarine

Method

  • Melt the margarine add onions and cook until soft, then add the mushrooms and cook until soft.
  • Add marmite, stir well.
  • Add soya flour and tahini.
  • Add Cheezly and breadcrumbs, salt and pepper.
  • Stir altogether and place in large bread tin or similar well greased and cook for 50 mins in a moderately hot oven.
  • Serve with marmite gravy.
  • If eaten cold turn out from tin when mixture is cold and slice thickly.
