Vegan Mushroom Roast
Ingredients
- 8oz mushrooms (large type are tastier), chopped finely
- 8oz Cheezly (vegan cheese) grated
- 2 onions chopped finely
- 1 tbs soya flour mixed with 2 tbs water
- 1 tbs tahini paste
- 2 tsp. Marmite
- 6 oz brown breadcrumbs
- Salt and pepper
- 4 oz vegan margarine
Method
- Melt the margarine add onions and cook until soft, then add the mushrooms and cook until soft.
- Add marmite, stir well.
- Add soya flour and tahini.
- Add Cheezly and breadcrumbs, salt and pepper.
- Stir altogether and place in large bread tin or similar well greased and cook for 50 mins in a moderately hot oven.
- Serve with marmite gravy.
- If eaten cold turn out from tin when mixture is cold and slice thickly.
