Tomato Tart

Ingredients

  • 1 Packet of puff pastry
  • Sun dried tomato paste
  • Sun dried tomatoes in oil approx. 7
  • chopped Mushrooms, approx 6 sliced
  • 4 fresh tomatoes skinned and sliced
  • Fresh Basil leaves
  • Salt and pepper

Method

  • Roll out the pastry to the size of a Swiss roll tin and place in the tin.
  • Leaving a 1/2 inch margin all the way round, spread the tomato paste on the pastry.
  • Scatter the rest of the ingredients evenly on top of the paste.
  • Season and sprinkle with basil.
  • Dribble a little oil from the sun dried tomatoes on top.
  • Place in a hot oven at about 220f until the pastry is puffed and golden then the oven can be turned down to 175f to cook until required.
  • Wonderful with a mixed green salad.
