Tomato Tart
Ingredients
- 1 Packet of puff pastry
- Sun dried tomato paste
- Sun dried tomatoes in oil approx. 7
- chopped Mushrooms, approx 6 sliced
- 4 fresh tomatoes skinned and sliced
- Fresh Basil leaves
- Salt and pepper
Method
- Roll out the pastry to the size of a Swiss roll tin and place in the tin.
- Leaving a 1/2 inch margin all the way round, spread the tomato paste on the pastry.
- Scatter the rest of the ingredients evenly on top of the paste.
- Season and sprinkle with basil.
- Dribble a little oil from the sun dried tomatoes on top.
- Place in a hot oven at about 220f until the pastry is puffed and golden then the oven can be turned down to 175f to cook until required.
- Wonderful with a mixed green salad.
