Tomato Tart with Smoked Tofu

Ingredients
- 1 packet Cauldron Organic smoked Tofu drained and grated
- 3 tablespoons sun-dried tomato paste
- 3 tablespoons olive oil
- 300grams puff pastry
- 300g cherry tomatoes halved
- 1 tablespoon basil freshly shredded
Method
- Preheat the oven to 220c/425f/gas 7
- Dampen a baking sheet with cold water.
- Place the tofu, sundried tomato paste and olive oil in a bowl, mix together and reserve.
- Roll out the pastry onto a floured surface and cut into a 25cm square and transfer onto the baking sheet. Make a square 2cm inside the pastry with a knife cutting halfway through the pastry. Mark the border with a pattern using a sharp knife.
- Place the tofu mixture within the inner square and top with the cherry tomatoes
- Bake for 25-30 mins under golden and well risen.
- Sprinkle with basil and serve.
