Tomato Tart with Smoked Tofu

Ingredients

  • 1 packet Cauldron Organic smoked Tofu drained and grated
  • 3 tablespoons sun-dried tomato paste
  • 3 tablespoons olive oil
  • 300grams puff pastry
  • 300g cherry tomatoes halved
  • 1 tablespoon basil freshly shredded

Method

  • Preheat the oven to 220c/425f/gas 7
  • Dampen a baking sheet with cold water.
  • Place the tofu, sundried tomato paste and olive oil in a bowl, mix together and reserve.
  • Roll out the pastry onto a floured surface and cut into a 25cm square and transfer onto the baking sheet. Make a square 2cm inside the pastry with a knife cutting halfway through the pastry. Mark the border with a pattern using a sharp knife.
  • Place the tofu mixture within the inner square and top with the cherry tomatoes
  • Bake for 25-30 mins under golden and well risen.
  • Sprinkle with basil and serve.
