Chocolate Cake
Ingredients
- cake
- 340g/12oz self-raising flour
- 1tbsp baking powder
- 255g/9oz castor sugar
- 9tbsp oil
- 2tbsp lemon juice
- 115g/4oz cocoa powder
- 12floz water chocolate cream icing
- 255g/8oz icing sugar, sieved
- 55g/2oz vegan margarine
- cocoa powder to taste filling
- Strawberry jam
Method
- Line 2 x 8" cake tins with grease-proof paper
- Sieve flour and baking powder into bowl
- Add castor sugar, oil, lemon juice, cocoa powder and water
- Mix well
- Put into cake tin and bake at 325F/170C/Gas 3 for 40 minutes. Check knife comes out clean icing
- Beat icing sugar, margarine and cocoa powder together
- Sandwich cake with layer of jam and layer of chocolate cream, trimming the cake if uneven
