Chocolate Cake

Ingredients

    cake
  • 340g/12oz self-raising flour
  • 1tbsp baking powder
  • 255g/9oz castor sugar
  • 9tbsp oil
  • 2tbsp lemon juice
  • 115g/4oz cocoa powder
  • 12floz water
  • chocolate cream icing
  • 255g/8oz icing sugar, sieved
  • 55g/2oz vegan margarine
  • cocoa powder to taste
  • filling
  • Strawberry jam

Method

  • Line 2 x 8" cake tins with grease-proof paper
  • Sieve flour and baking powder into bowl
  • Add castor sugar, oil, lemon juice, cocoa powder and water
  • Mix well
  • Put into cake tin and bake at 325F/170C/Gas 3 for 40 minutes. Check knife comes out clean

  • Beat icing sugar, margarine and cocoa powder together
  • Sandwich cake with layer of jam and layer of chocolate cream, trimming the cake if uneven
  • Cover the cake with chocolate cream
