Best Ever Vegan Sponge Cake

Pretty amazing cake, considering it's vegan!

Ingredients

  • 275g/10 oz/2 cups self raising flour use white for a lighter cake
  • 1 teaspoonful bicarbonate of soda
  • 225g/8 oz/1 cup caster sugar
  • 200ml/8 fl oz/1 cup sunflower oil
  • 150ml/5 fl oz/generous ½ cup orange juice
  • 150ml/5 fl oz/generous ½ cup water
  • 1 ½ teaspoons vanilla extract
  • fruit jam your favourite about 4 tablespoons
  • 1 carton Granovita vegan cream whipped

Method

  • Preheat the oven 160/325/gas 3 Grease and line base of 2 cake tins (see above) with non stick baking parchment.
  • Sift the dry ingredients into bowl.
  • Into a second bowl whisk all the liquids together and then pour into the dry ingredients and beat well to make a smooth mixture.
  • Pour into tins equal amounts and place in oven. Cook for approx 30 mins.
  • Leave cake to cool in tins and then turn out onto a cooling rack.
  • Peel off base paper and leave to cool completely.
  • Sandwich together with jam and cream.
  • Sift a little icing sugar on top.

hello from maryland!

can you please tell me what the symbol A with a ^ means in your sponge cake recipe?

we've tried to find this symbol, but i'm afraid we haven't been able to decipher how it fits in the recipe. is it an abbreviation for "or"?

Hi, this sounds a very good recipe but I have had no success making a vegan sponge. I need a recipe that would be suitable for a 3 tier wedding cake: how to graduate the ingredients to larger sizes and how successful this is likely to be. I do not wish to waste ingredients and I do not wish to let my bride down with a cake that is terrible, both in taste and appearance. I should be most grateful if you could possibly help me as the date of the wedding is drawing nearer every day. Or could you perhaps supply me with a website that makes these kinds of cakes.
