Cheese and Chive Bread (vegan)

Easy to make and ideal to have with soup or salad as a quick snack

Ingredients

  • 225g/8oz/2 cups white self raising flour (or wholemeal if you prefer)
  • 1 tsp salt
  • 1 tsp mustard powder
  • 100g/3 ½ oz vegan melting redwood cheddar cheese grated
  • 1 tsp egg replacer mixed with 2 tbls water
  • 2 tbs fresh chopped chives
  • 25g/1oz/6 tsp dairy free margarine softened
  • 150ml/1/4 pint/2/3 cup soya milk

Method

Grease a 9 inch square cake tin and line the base
Sieve the flour,mustard and salt into a large mixing bowl
Reserve 3 tbs of the grated cheese for sprinkling over the top of the bread before baking in the oven
Stir the remaining cheese along with the chives. Mix well
Add the liquid ingredients with the margarine and stir thoroughly
Pour mixture into prepared tin and sprinkle cheese on top
Bake in a preheated oven190c/375F/Gas Mark 5 for 30 minutes Leave the bread to cool slightly before turning out. Cut into triangles to serve Recipe adapted to being vegan from Cookshelf baking
